  • 4 medium artichokes (cleaned and chopped)
  • 1 large potato
  • 1 carrot
  • 1 onion
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 1 liter vegetable stock or chicken stock
  • 1 glass milk (cream can also be used if desired)
  • Salt
  • Black pepper
  • 1 teaspoon grated nutmeg (optional)
  • For the top: Dill or crispy bread cubes

🍵 How to Make Artichoke Soup?

1. Prepare the Vegetables: Chop the onion. Peel the potatoes and carrots and cut them into small cubes. Cut the artichokes into large pieces.

2. Sauté the Onion: Put the olive oil and butter in the pot. Add the onions and fry on medium heat until they turn pink.

3. Add the Vegetables: Add the carrots and potatoes to the onion. Sauté for 2-3 minutes. Add the artichokes and mix.

4. Add the Water: Pour the vegetable or chicken stock into the pot. Add salt, pepper and nutmeg. Cover the pot and cook on medium heat until the vegetables are soft (about 20-25 minutes).

5. Puree the Soup: After the vegetables are cooked, puree the soup with a hand blender until smooth.

6. Enrich with Milk or Cream: Add milk (or ½ cup cream if you prefer). Boil for another 2-3 minutes while stirring. If the consistency is too thick, you can add a small amount of hot water.

7. Serving: Serve hot. You can sprinkle finely chopped dill on top or serve with crusty bread.
