📝 Ingredients
- 1 medium onion
- 2 cloves of garlic
- 2 tablespoons of olive oil
- 1 medium potato
- 1 carrot
- 1 liter of vegetable broth (or chicken broth)
- 500 grams of broccoli
- 1 tea glass of milk (cream can also be used if desired)
- Salt
- Black pepper
- Grated nutmeg (optional)
- For the topping: Croutons or grated cheddar cheese
👩🍳 Preparation Steps
1. Prepare the Vegetables
Chop the onion into cubes. Finely chop the garlic. Peel the potato and carrot and cut them into small pieces. Separate the broccoli into florets and wash them well.
2. Sauté the Onion and Garlic
Put the olive oil in the pot and heat it. Add the onion and fry until it turns slightly pink. Then add the garlic and sauté for 1 minute.
3. Add the Vegetables
Add the potatoes and carrots and fry for a few more minutes. Then add the vegetable broth and cook until the vegetables are soft (about 10-15 minutes).
4. Add the Broccoli
After the vegetables are soft, add the broccoli and boil for another 7-8 minutes. Remove the broccoli from the stove before it loses its vibrant green color.
5. Blend
After removing the soup from the stove, use a hand blender to blend until it reaches a smooth consistency.
6. Add the Milk and Spices
Put the soup back on the stove once it has become smooth. Add the milk (or cream, if you prefer). Add salt, pepper and optionally some grated nutmeg. After boiling, turn off the heat.
