Ingredients
- 2 medium celery
- 1 medium potato
- 1 medium carrot
- 1 onion
- 2 tablespoons olive oil (or butter)
- 1 tablespoon flour
- 5 cups hot water (or chicken/vegetable stock)
- Juice of half a lemon
- Salt
- Black pepper
- Optional: 1 tea glass of milk or 1 tea glass of cream (to make the soup softer and creamier)

How to Make
Prepare the Vegetables: Peel and dice the celery, potatoes and carrots. You can soak the celery in lemon water to prevent it from turning black. Chop the onion into small pieces.
Fry the Onion: Pour olive oil into a deep pot. Add the chopped onion and fry until it turns pink.
Add the Flour: After the onions are fried, add 1 tablespoon of flour. Fry for 1-2 minutes while stirring to remove the smell.
Add the Vegetables: Then add the chopped celery, carrots and potatoes to the pot. Sauté the vegetables for 2-3 minutes.
Add the Liquid: Add hot water or chicken/vegetable stock. Season with salt and pepper. Cover the pot and cook on medium heat for about 20-25 minutes until the vegetables are soft.
Puree the Soup: After the vegetables are soft, puree the soup with a hand blender until it reaches a smooth consistency. At this stage, you can add milk or cream to make the soup softer if you wish.
Final Touch: If the consistency is thick, you can dilute it with some hot water. Finally, add the lemon juice, stir and boil for another time.
Serving: Your soup is ready to serve! Serve hot by sprinkling finely chopped dill or celery leaves on top.

- Soaking the celery in lemon water both prevents it from darkening and softens its flavor.
