This soup, which has won our hearts with its easily found ingredients and its quick preparation, is also easy to digest and quite nutritious. 🥣 Ingredients (for 4 people)

  • 1 cup red lentils
  • 1 onion
  • 1 medium carrot
  • 1 medium potato
  • 1 tablespoon tomato paste
  • 2 tablespoons oil (olive oil optional)
  • 1 tablespoon butter
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon cumin (optional)
  • 6 cups hot water or meat/chicken stock

👩‍🍳 Preparation

  1. Preparation Chop the onion. Cut the carrots and potatoes into small cubes. Wash the lentils with plenty of water and drain.

  2. Roast the Vegetables Add the oil and butter to the pot. Roast the onion until it turns pink. Then add the chopped carrots and potatoes and fry for another 3-4 minutes.

  3. Add the tomato paste Add the tomato paste and fry until it smells.

  4. Add the Lentils Add the washed lentils and mix.

  5. Give it water Add the hot water or meat/chicken stock. Add salt and spices. Cover the pot and cook on medium heat until the lentils are completely soft, about 25-30 minutes.

  6. Puree the Soup Blend the cooked soup until smooth with a hand blender. (You can also strain it if you wish.)

  7. Checking the Consistency If the consistency is thick, you can add some hot water and mix again. Boil for another 1-2 minutes and remove from heat.

  • You can also add 1 clove of garlic for a more aromatic soup.
  • You can also get a light version by using plain water instead of broth.
