Leek Soup Recipe for 6 People
Leek is one of the indispensable vegetables of winter tables. You can prepare a great soup with this vegetable, which is as delicious as it is nutritious. Here is a leek soup recipe for 6 people that is both practical and pleasing to the palate:
🍲 Ingredients
- 3 medium leeks
- 1 medium potato
- 1 carrot
- 1 onion
- 2 tablespoons of olive oil
- 1 tablespoon of butter
- 6 cups of water (chicken or vegetable broth can be used optionally)
- 1 tea glass of milk or cream (optional)
- Salt
- Black pepper
- Optional: 1 teaspoon of grated nutmeg or chili pepper (can be used when serving)

Prepare the Vegetables: Peel and wash the outer skins of the leeks, finely chop the white and light green parts. Peel the potatoes and carrots and chop them into small cubes. Chop the onion into small pieces.
Roast the Vegetables: Pour olive oil and butter into the pot. Add the onion and sauté for a few minutes. Then add the carrots and potatoes and sauté for 5 minutes. Finally, add the leeks and continue sautéing until the vegetables begin to soften.
Add Water and Cook: Pour 6 cups of hot water into the pot. Add salt and pepper. Cover the pot and cook on medium heat for about 20-25 minutes until the vegetables are completely softened.
Puree the Soup: After the vegetables are completely softened, use a blender to make the soup smooth. If you want a thicker consistency, you can add a little more potatoes or reduce the water.
Adjust the Consistency: If you want to lighten the consistency, add a little more hot water or milk/cream. Boil with the liquid you added for another 5 minutes.
Preparation for Serving:
Serve your soup hot. You can add flavor by sprinkling some grated nutmeg, black pepper or red pepper flakes on top. It makes a great meal with toasted bread slices.
🥄 Tip
To reduce the bitterness of the leeks, you can soak them in salted water for a few minutes after chopping them.
If you use cream instead of milk, your soup will have a thicker and creamier consistency.
If you wish, you can add a clove of garlic to create a different flavor.
