🌿 Zucchini Soup Recipe (For 6 People)
Ingredients
- 3 medium zucchinis
- 1 medium onion
- 1 tablespoon butter
- 1 tablespoon olive oil
- 1 tablespoon flour
- 5 cups hot water or chicken broth
- 1 cup milk (cream can also be used if desired)
- Salt
- Black pepper
- Optional: dill (for serving)

How to make
Preparation: Wash and peel the zucchinis. Cut them into cubes. Chop the onion into small pieces.
Sautéing: Heat the butter and olive oil in a pot. Add the onions and fry until they turn pink. Then add the flour and continue to fry for another 1-2 minutes.
Adding the Zucchinis: Add the chopped zucchinis and sauté for a few minutes. Add hot water (or chicken broth) and close the pot lid. Cook for about 20 minutes until the zucchinis soften.
Blender: After removing from the stove, blend the soup (you can use a hand blender or food processor) and obtain a smooth consistency.
Add Milk:
Put it back on the stove and add the milk. Boil for another 5 minutes. Season with salt and pepper.
- Serving: Serve hot. You can add finely chopped dill or garnish with a dollop of cream.
