🍃 Ingredients
- 500 grams of fresh spinach (cleaned and chopped)
- 1 onion (chopped finely)
- 1 tablespoon butter
- 1 tablespoon olive oil
- 2 tablespoons flour
- 5 cups water (or chicken/meat stock, if desired)
- 1 cup milk (optional)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon grated nutmeg (optional)
👩🍳 How to make
Fry the onion: Add the butter and olive oil to the pot. When it is hot, add the chopped onion and fry until it turns pink.
Add the flour: Add the flour to the onions and fry until the smell goes away (about 2-3 minutes).
Add the spinach: Add the chopped spinach to the pot, fry for a few minutes. Cook until the spinach loses its volume.
Add the water: Add water or meat/chicken stock to the pot. Stir and bring to a boil.
Add the spices: Add salt, pepper and a small amount of grated nutmeg if desired.
Put through the blender: Remove the soup from the stove and blend with a hand blender until it reaches a smooth consistency.
Thicken with milk (optional): If you want a creamier taste, add milk and boil for a few more minutes.
Serving: Serve hot. You can serve with croutons, yogurt or roasted sesame seeds on top.
📝 Tips
Washing the spinach well beforehand and soaking it in vinegar water prevents soil residues.
You can adjust the consistency of the soup by increasing or decreasing the amount of water.
Cream can also be used instead of milk for a richer flavor.
