🥣 Spinach Soup Recipe (For 6 People)

🍃 Ingredients

  • 500 grams of fresh spinach (cleaned and chopped)
  • 1 onion (chopped finely)
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 2 tablespoons flour
  • 5 cups water (or chicken/meat stock, if desired)
  • 1 cup milk (optional)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon grated nutmeg (optional)

👩‍🍳 How to make

  1. Fry the onion: Add the butter and olive oil to the pot. When it is hot, add the chopped onion and fry until it turns pink.

  2. Add the flour: Add the flour to the onions and fry until the smell goes away (about 2-3 minutes).

  3. Add the spinach: Add the chopped spinach to the pot, fry for a few minutes. Cook until the spinach loses its volume.

  4. Add the water: Add water or meat/chicken stock to the pot. Stir and bring to a boil.

  5. Add the spices: Add salt, pepper and a small amount of grated nutmeg if desired.

  6. Put through the blender: Remove the soup from the stove and blend with a hand blender until it reaches a smooth consistency.

  7. Thicken with milk (optional): If you want a creamier taste, add milk and boil for a few more minutes.

  8. Serving: Serve hot. You can serve with croutons, yogurt or roasted sesame seeds on top.


📝 Tips

  • Washing the spinach well beforehand and soaking it in vinegar water prevents soil residues.

  • You can adjust the consistency of the soup by increasing or decreasing the amount of water.

  • Cream can also be used instead of milk for a richer flavor.
