Vegetable Soup Recipe

🌿 Vegetable Soup Recipe (Serves 6)
A light but nutritious classic that warms us up on cold days: Vegetable Soup! This recipe, full of colorful vegetables, will be both a healthy and filling start.
📝 Ingredients
- 2 tablespoons olive oil
- 1 onion (chopped small)
- 2 cloves of garlic (crushed)
- 1 carrot (diced)
- 1 potato (diced)
- 1 zucchini (diced)
- 1 cup broccoli (chopped into small pieces)
- 1 tea glass of peas (optional, boiled or canned)
- 1 tomato (peeled and chopped or grated)
- 6 cups vegetable stock or plain water
- Salt, black pepper
- 1 teaspoon of red pepper powder
- 1 teaspoon of thyme (optional)
- 1 pinch of finely chopped parsley (for serving)
👩🍳 Preparation
Heat the olive oil in a large pot. Add the onion and fry until it turns pink.
Add the garlic, stir for a few seconds until the smell comes out.
Add carrots and potatoes and sauté for 3-4 minutes.
Then add zucchini, broccoli, peas and tomatoes. Cook the vegetables for 2-3 minutes, stirring.
Pour vegetable stock or plain water into the pot. Add salt, pepper and other spices.
Cover the pot. Once it starts to boil, reduce the heat and cook for about 20 minutes until the vegetables are soft.
If you wish, you can make it smooth with a blender or leave the vegetables in pieces.
Serve hot, garnished with finely chopped parsley.

You can get a more filling meal by serving it with toasted whole wheat bread or croutons.
